Extreme Accountability Challenge

After posting my scales daily to Facebook for 93 days, one thing is clear, when you know that you’re going to be weighing tomorrow morning, then the next day, then the next, and posting it for the World to see, it’s extremely motivating to find good tasting recipes that are easy to prepare, like Rush’s Hamburgers in South Carolina says, Fabulous Food Fast. Unfortunately, the 3 piece fried chicken meal with fries, slaw, a roll, a diet coke, and a hot fudge nut sundae for dessert, won’t give me the weight loss that I seek.

So I need a plan. With John Davisson’s, my health coach, help, I have created several simple meals that work and won’t leave you with a weight gain in the morning.
Here’s one example.
The picture above is simple

6 ounces smoked chicken breast
(From a few nights ago)
1/2 cup sauteed spinach separately
1/2 cup sauteed asparagus separately, seasoned with Montreal Steak Seasoning
Heat about 2 tablespoons of olive oil in pan
2 tablespoons minced garlic sauteed (or more in case of Vampire invasive!)
Add paprika then chicken stock and lemon juice
Combine chicken, spinach, and asparagus in garlic, lemon, and chicken stock mixture for a few minutes over medium heat.

Serve!

PS
I also add Red Pepper Flakes to mine, if you want it spicier.
